
Pumpkin Pancakes
Ingredients:
½ cup all-purpose flour
½ cup whole wheat flour
1 tablespoon packed brown sugar
1 ½ teaspoons baking powder
½ teaspoon pumpkin pie spice
¼ teaspoon salt
1 egg
1 cup fat-free milk
½ cup canned pumpkin
¼ teaspoon vanilla
1 tablespoon canola oil
1. Put the
all-purpose flour, whole wheat flour, brown sugar, baking powder, pumpkin
pie spice, and salt into a medium bowl.
Stir with a wooden spoon to mix.
2. Crack the
egg into a small bowl. Beat with a whisk
until yolk and white are mixed. Add the
milk, pumpkin, vanilla and oil to egg.
Beat with the whisk until ingredients are well mixed.
3. Add egg mixture to flour mixture. Stir with a wooden spoon until dry
ingredients are wet. (the batter should
be slightly lumpy, not smooth.)
4. Lightly
coat a skillet with cooking spray. Heat to
medium.
5. For each pancake, pour ¼ cup full of
batter onto the hot skillet. Cook over
medium heat until pancakes have slightly bubbly surfaces and the edges are
slightly dry, approx. 2 minutes.
6. Turn pancakes over, cook until bottoms are
golden brown.
(I serve pancakes with a dollop of whipped cream with
cinnamon sprinkled on top. )
